Birthday Bacon
Mo's Dark Bacon Bar
My wonderful in-laws gave me a great birthday gift bag this week, full of all sorts of exotic yummy stuff.
There was lemon cake, SPICY German mustard, a white chocolate crunch-like bar, some strawberry jam, and a Vosges Mo's Dark Bacon Bar.
Now, while I'd heard of it before, I'd never tried the bacon bar. It's a small thing, half an ounce containing Applewood smoked bacon, Alderwood smoked salt and dark chocolate. Now, I'm keen on both white chocolate (yes, I know, it technically isn't since it has no cacao) and very dark. So, I opened it up, exposed a corner and nibbled.
Very dark strong chocolate taste. Little crunchy bits. Sort of a salty undercurrent. Hmm. I guess I can taste bacon. Maybe it's more subtle than I thought. Second bite. It starts with the sharp bitter edge of the dark chocolate, and then the salty bit comes in. Finally, towards the end I start to taste the sweetness and the flavor of the bacon. At the finish, I'm left with a whisper of the dark chocolate and a flourish of the bacon as I nibble one of the crispy bacon bits stuck in my teeth. Much better than the first bite.
The third bite is much the same as the second, a more developed impression of the flavors.
It's good, and unique. It is a little subtle, but nice. I'm not sure I'd be hooked on it, but it's definitely an experience bacon fans should try at least once.
