BACON SCONES: CHEDDAR/SCALLION & MAPLE/PECAN

Scone base:
4 cups all-purpose flour
1 stick unsalted butter, cold & cut into pieces
10 T shortening
1 ½ T baking powder
1 ½ tsp. kosher salt or 1 tsp. table salt

CHEDDAR/SCALLION SCONES:
2 slices (approx. 1 ½ oz.) bacon, cooked, cooled, & chopped
½ cup grated cheddar cheese*
¼ cup chopped scallions/green onions
½ cup buttermilk + extra for glaze.

MAPLE/PECAN SCONES:
2 slices (approx. 1 ½ oz.) bacon, cooked, cooled, & chopped
1 cup pecans, chopped*
¼ cup half and half
¼ cup maple syrup + extra for glaze
